A Delight For All The Senses: Exotic Fruit Mosaic
As pretty as a picture, this easy to make breakfast option is a delight for all the senses – Exotic Fruit Mosaic. Get your sweet tooth fix from an array of exotic fruits artfully arranged on an edible disc of zesty green apple jelly. The addition of edible flowers elevates the humble breakfast to another level.
Ingredients:
Selection of fresh fruits, including:
- 50 g honeydew melon
- 50 g kiwi
- 50 g dragon fruit
- 25 g strawberries
- 40 g green melon
- 30 g mango
- 50 g mixed berries
Green apple jelly (makes 50 g)
- 300 ml green apple juice
- 100 ml cold water
- 10 g agave syrup
- 4 g agar-agar powder
- 5 g edible flowers to serve
Preparation:
- Thoroughly wash and peel (where necessary) the fruits
- Use a selection of fruit carving implements such as a melon baller, zester, U-garnisher, V-cutter etc. to create different shapes or just get creative with your own freehand carving technique
- To make the green apple jelly, combine the apple juice and water and bring to the boil
- Add the agave syrup and agar-agar, remove from the heat and pour into a round cake ring or individual silicone moulds
- Leave to set
- To serve, arrange the fresh fruit pieces on top and garnish with edible flowers
